Keeping it Cool All Summer Long

School is almost at an end, and the summer heat is quickly approaching. So, it’s finally time to grab your sunscreen, swimsuit, and a tasty treat and hit the beach. Forget about milkshakes and ice cream sundaes — the only thing you’ll desire on a hot sunny day will be a delicious popsicle. Not the artificial-food-colored-store-brand-pops, but a homemade flavorful easy to make popsicle. Who doesn’t like a cool refreshing popsicle while sitting on a hot sandy beach?
Strawberry Lemonade on a Stick
Ingredients:
- 1/3 cup of granulated sugar
- 6 Strawberries
- 1 cup of fresh lemon juice (4-6 lemons)
- 1/2 cup of water
Directions:
- Simple Syrup: Boil 1/3 cup of water in a small saucepan. Add the sugar and stir until dissolved. Remove from heat and let cool.
- Chop strawberries into small pieces.
- Divide the strawberries into 6 Popsicle molds.
- Combine simple syrup, lemon juice, and water. Once combined, add the lemonade into wells and place into freezer until frozen, around 4-5 hours.
Classy Watermelon
Ingredients:
- 20 oz of watermelon
- 3 oz of blackberries
- 10 oz limeade
Directions:
- Place all ingredients in a blender and puree until smooth. Pour mixture into popsicle wells and insert popsicle sticks.
- Place in freezer until frozen, around 4-5 hours.
A Tasty Twist on the Summer Classic
Ingredients:
- 1/2 large pineapple, chopped (about 4 cups)
- 15 oz of cream of coconut
- 3 Tbsp fresh lime juice
- pinch of fine salt
Directions:
- Puree the pineapple, cream of coconut, lime juice, and salt in a blender until smooth.
- Evenly pour the mixture into popsicle wells. Insert ice-pop sticks and freeze until frozen, around 4-5 hours.
