Coffee Cake in a Mug

Coffee+Cake+in+a+Mug

This coffee cake is delicious as well as super easy and fast to make! This recipe makes one perfect serving of warm, moist and crumbly coffee cake, and the best part is that it takes less than 5 minutes to make!

Ingredients:

  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1 egg white
  • 2 tablespoons sour cream (plain greek yogurt works as a substitute)
  • A few drops vanilla
  • ¼ cup flour
  • 2 tablespoons flour
  • ⅛ teaspoon baking powder
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon

Directions:

  1. Grab the cup of your desire, preferably a mug, and microwave a tablespoon of butter in it for about 10 to 15 seconds so it’s not completely melted but soft.
  2. Stir two tablespoons of sugar into the softened butter until creamy.
  3. Mix in one egg white to the sugar and butter mixture.
  4. Stir in sour cream (or greek yogurt), a few drops of vanilla, 1/4th cup flour and baking powder.
  5. In a separate small bowl mix 1 tablespoon of butter, 2 tablespoons of flour, brown sugar and cinnamon together to create the crumb topping. Feel free to smoosh this together with your fingers.
  6. Add the crumb topping to the top of your cake mixture but don’t mix it in.
  7. Now microwave it. Start with 1 minute, then do 10 more seconds until it’s done to your liking. Let it cool down for a little and ENJOY!
