For this recipe, I was going to start out by talking about how ‘summer is right around the corner’ and all those cliché expressions, but then I realized that we live in Santa Barbara, California, where there are no seasons and ‘cold’ is anything under 65°F. For us (or for me at least), the perfect temperature is between 68°F and 73°F, with no wind or clouds. Anything above is sweltering and anything below is freezing.
But, like I said before, summer is right around the corner, and it’s likely that there will be many more ‘hot’ days than cold, so here’s is the easiest recipe, probably ever, for watermelon popsicles that will most likely ruin your beach body. But don’t worry because round is a shape, so you’ll still be in shape.
Ingredients:
- 4 cups (cubed) watermelon
- 1 tablespoon lime juice
- 1 tablespoon honey (optional)
Directions:
- Blend all ingredients (in a blender or food processor)
- Strain out the pulp
- Pour into molds (or dixie cups with popsicle sticks)
- Freeze until solid
