Ingredients:
Filling:
- 3 small or 2 large lemons
- 1½ cups sugar
- 10 oz butter
- 3 cups flour
- A pinch of salt
- 1 egg
Directions:
- Preheat oven for 375 °F
- Cut lemons into fourths, then remove seeds and blend with sugar.
- Cut butter into small cubes and mix with flour and salt.
- Roll dough into two balls and chill for 30 minutes.
- Roll out dough and place one sheet in a rectangular pan.
- Pour in filling and cover with second sheet of dough.
- Brush with a beaten egg.
- Bake for 35 minutes or until golden brown.
