Life, Liberty, and the Pursuit of Nachos

Up there with artistic and scholarly pursuit, nachos are a deep passion of mine. I have spent countless hours with a deep, steaming dish of crispy corn tortilla chips, laid thick with delicious melted cheese, laden with beans and piled high with guacamole and sour cream. But what are the best nachos I have ever eaten?

I have eaten nachos from east to west, from Massachusetts to Mexico, and there have been some major highs and some painful lows. But, to find my favorite nachos, I need look no further than out my back door. Down the street is my favorite Mexican restaurant, Little Alex’s. They have amazing tacos, enchiladas, burritos, chimichangas and, of course, some of the best nachos I have ever had in my life.

Now, the problem that I often have with nachos is their size. I’m a pretty solid eater, and my appetite has been known to be of impressive depth, but even I can’t stomach the usual portion size of a whole plateful of nachos. Little Alex’s, however, has an excellent solution, the brilliance of which lies in its simplicity: They have nacho sizes! They have both small and large nachos, and the small is one I can easily consume in one sitting, yet still hefty enough that I can afford to give up a few priceless bites to my parents.

These nachos, though. First bite, you get it all. The salty crunch of the dry chip, combated by the warm melty goo of the cheese, all topped of with the cool and flavorful guacamole. You got your beans. You got your chicken. You got your sour cream. There are so many different ingredients, it’s hard to get a bite with every one in it, but when you do… Let’s just say I no longer fear death, for I have experienced heaven and it is nachos.

As I am writing this, I have not eaten anything all day, and I am becoming ridiculously hungry. If nobody’s perfect, then I guess that you can call a big plate of Little Alex’s nachos nobody. If they make the marriage of food legal, you can go ahead and sign me up, because that is an opportunity I would not let go. I would strongly implore you to try this remarkable delicacy for yourself, to find out on your own how this dish will change your life. It certainly changed mine.
