Some of the basic basic necessities you will need to be able to make these yummy cookies + a more unusual ingredient but very necessary is pumpkin puree.

Ingredients

  • /2 cup unsalted butterScreen Shot 2015-12-14 at 10.58.00 AM
  • 1/4 packed light or dark brown sugar
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup white chocolate chips6 tablespoons pumpkin puree
  • 1 and 1/2 cups all-purpose flour

Directions –

  1. Melt the butter in the microwave. In a medium bowl, whisk the melted butter, brown sugar, and 1/2 cup granulated sugar together until no brown sugar lumps remain. Whisk in the vanilla and pumpkin until smooth. Set aside.
  2. In a large bowl, toss together the flour, salt, baking powder, baking soda, 1 and 1/2 teaspoons cinnamon and pumpkin pie spice.
  3. Pour the wet ingredients into the dry ingredients and mix together with a large spoon or rubber spatula. Add in white chocolate chips and then cover the dough and chill for 30 minutes.
  4. Preheat oven to 350 degrees. Take the dough out of the refrigerator and form it into balls. Roll the balls in cinnamon and sugar and then place on a baking sheet. Put the baking sheet into the oven and leave the cookies in there for about 8 – 10 minutes. Let cool and enjoy them!
